Super Mom Monday

It's time to go back to the basics.  Sometimes I think we can confuse things with too many ingredients and too much time needed.  This recipe is simple, easy, and to the point.  Butternut squash at its best. 

    1 butternut squash (organic tastes best!)

    1 to 4 tbls. butter or coconut oil

    Pinch of sea salt (optional)

Cut the butternut squash in half.  Scoop out seeds.  Flip over (skin side up) and place the two halves down in a baking dish with about 1/2- 1 inch of water in the dish.  Bake at 400 for 45-60 minutes, or until nice and soft. 

Scoop out squash with a spoon, mash if you would like, top with butter or coconut oil and sea salt (if you desire).  This is SO delicious!  Enjoy!
